| 1.5 pound of sausage
1 large diced onion
1 red and green pepper
2 cloves of sliced garlic
4 cups of grated cheese
1 1/2 sliced mushrooms
1 cup of milk
2 dozen eggs
salt and pepper
Your favorite hot sauceHeat a 12" Dutch oven using about 25 briquettes to pre heat the bottom until hot. Brown the sausage then add and saute the onions, garlic, bell peppers, and mushrooms until they're tender. Mix together eggs and milk. Season with salt and pepper. Pour the eggs over sausage and vegetable mixture. Cover and bake using 8 to 9 briquettes on the bottom and 15-16 briquettes on top for about 20 minutes or until eggs are firm. Sprinkle top with cheese and replace lid. Let stand until cheese is melted.
