Cracklin cornbread by the Oldtimers

1/2 cup oil, or drippings plus 3 tsp 2 cups corn meal 2 cups ap flour 2-4 tabs sugar 2 tabs baking powder 1 teas salt 2 cups milk 2 eggs beaten 1 1/2 cup cracklins Preheat a 12" Dutch oven to 425º( 21 top coals& 10 on bottom) Heat shortening for 3 minutes. Combine dry ingredients add milk and eggs mix until blended, pour in melted shorten and cracklin stir well ...pour into hot Dutch oven and bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean. During the last 5 to 10 minutes of baking time, you may need to remove the bottom heat to prevent over-browning.
