Chicken and Rice
One chicken, cut up
1 1/2 cups uncooked rice (not instant rice, I prefer conditioned or parboiled rice)
Two cans cream of mushroom soup (Cream of Chicken and Cream of Chicken Mushroom are good too)
Two soup cans water
1/2 tsp Liquid Smoke
One large onion, chopped
One stalk celery, chopped
One stick butter (I use 1/2 stick if I feel fat)
Salt and pepper to taste
Saute onion and celery in butter until clear, add rice, soup and water, a few shakes of salt and pepper, and Liquid Smoke. Pour mixture into twelve inch Dutch Oven. Salt and pepper chicken, then push into rice mixture. Bake approximately one and a half hours at 350 degrees until chicken is done.
