Borderline Casserolle 

1 ½   pound ground beef

1       cup chopped onion

1       can black-eyed peas with jalapenos, drained

1       can black beans, drained and rinsed

½     teaspoon garlic powder

3      cloves mined garlic

1      can Rotel

1       can cream of chicken soup

1       can cream of mushroom soup

1      can enchilada sauce

1       can green chilies

1      8 oz tub sour cream

20     corn tortillas

3      cups grated cheese

½     package taco seasoning powder

 

In a 12 deep Dutch oven , brown meat with taco seasoning and add onions, cook till meat is brown and onions start to get tender.  In a large mixing bowl add all ingredients except tortillas and cheese.  Stir till well blended. Add the meat mixture to the mixing bowl and stir .  Wipe clean the Dutch oven and  layer the bottom with torn tortillas, completely covering the bottom .  Add 1/3 of the meat mixture and cover with 1 cup of cheese.  Repeat  process ending with cheese on top.  Cook 45 minutes at 350º.

This sounds great, It will be one of my first dishs of the winter. I will probably go with a whole package of Taco Seasoning... I like it spicy!
