cinnamon roll topped peach cobbler 

CINNAMON ROLL TOPPED PEACH COBBLER

 

4  Cans peaches  (drain 2)

1  cup sugar

2  Tablespoons cornstarch

2  teaspoons cinnamon

2  teaspoons flour

¾ cup brown sugar packed

1  stick butter melted

1 stick butter cubed

2  cups all purpose flour

2  teaspoons sugar

2  teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup shortening

1  cup buttermilk

 

 

12” Dutch oven..  place peaches, cup of sugar, cornstarch,  2 teaspoons flour, cubed butter and cinnamon in the oven and cook till mixture is thickened and bubbly.  Remove from heat.

 

Combine melted butter and brown sugar and set aside.  You could add chopped pecans if wanted.

 

In a large mixing bowl combine flour, 2 teaspoons sugar, baking powder, baking soda, and salt.  Mix well. Cut in shortening until mixture looks like crumbs.  Make a well in the center and add buttermilk.  Stir till dough clings together.

 

Turn dough onto a floured surface and knead  10 or 12 times.  Roll dough into a 12x8 rectangle, spread the brown sugar mixture over dough.  Roll up from one of the long sides.  Cut this into 15 slices.

 

Now place the cinnamon rolls over top of the peach mixture and cook at 400º for 25 to 30 minutes or until the topping is a golden brown color.
