CARAMEL APPLE CHEESECAKE
1 can (20oz) apple pie filling
1 (9 in) graham cracker pie crust
2 (8oz) cream cheese, softened
½ cup sugar
1 teaspoon vanilla extract
2 eggs beaten
¼ cup caramel ice cream topping
Heat oven to 350º empty the apple pie filling into a bowl and chop the sliced apples into small pieces. Remove ½ cup and set aside. In a medium mixing bowl , beat together the cream cheese, sugar, and vanilla until smooth. Add eggs and apple filling, mix well. Pour into pie shell and bake for 35 minutes or until center is set. Cool on a wire rack. When the cheesecake is cooled, mix the caramel and ½ cup apple pie filling together and spread it over the top of the cheesecake. Chill before serving.
Can add chopped pecans on the top if desired.
