1 tablespoon vegetable oil
1 pound skinless chicken breast cut into 1inch cubes
1 medium onion chopped
1 medium green bell pepper chopped
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon garlic powder
1 cup dry red wine
1 can black beans drained and rinsed
1 can great northern beans undrained
1 can diced tomatoes, undrained
1 can (8 3/4 oz) whole kernel corn drained
1/2 teaspoon salt
Heat oil in a large skillet on med heat. add chicken, onions, and bell peppers and cook till chicken is done. (7-8minutes) Add in the chili powder, cumin, and garlic powder and stir them in till the spices are mixed with the chicken well. Stir in the remaining ingredients and bring it to a boil. Reduce the heat and simmer for 20-30 minutes.
