Apache Chicken
1 ¾ cups uncooked rice 6 Boneless skinless chicken breast 1 Can (14oz) chicken broth 1 Cup picante sauce 1 Can 8oz tomato sauce ½ Cup chopped onion ½ Cup chopped bell pepper ¼ Cup chopped and seeded jalapeno pepper 1 Bunch chopped green onion including tops ½ Cup shredded Monterey Jack cheese ½ Cup shredded Cheddar cheese Salt and pepper to taste
Spread the rice in a greased baking dish (13x9). Sprinkle both sides of the chicken with salt and pepper. Place chicken over rice. In a bowl, combine the broth, picante sauce, tomato sauce, onion, green onion, and peppers; pour over chicken.
Cover and bake at 350º for 55 minutes or till juices run clear. Sprinkle with cheese and bake 5 minutes longer or until cheese is melted.
