Coca Cola Cake 

Coca Cola Cake

12" Dutch oven



2 cups flour

2 cups sugar

1 tsp soda

2 sticks butter

3 heaping tbsp cocoa

1 cup Coke

1/2 cup buttermilk

2 eggs, unbeaten

1 tsp vanilla

2 cups miniature marshmallows



1/2 cup butter

3 tbsp cocoa

6 tbsp Coke

1 lb box powdered sugar

1 cup chopped pecans


Combine flour, sugar, and soda in a large mixing bowl.  Melt 2 stick of butter and then add cocoa and Coke.  Heat and stir while bringing mixture to a boil. Pour over dry ingredients and mix well. Add buttermilk, eggs, and vanilla and beat well.  Stir in marshmalows.  This is a thin batter and marshmallows will float on top.  Bake in a greased Dutch oven at 350 degrees with very few coals on the bottom (and rotate the oven frequently to prevent burning bottom) for 30 to 35 minutes until a toothpick inserted into center comes out clean.  Ice while hot.  Icing:  Melt butter and stir in cocoa and Coke. Bring to a boil.  Add to powdered sugar and pecans, mix well, and spread on hot cake.
