thanksgiving 

Did anyone use cast iron to cook thanksgiving dinner?

I cooked a Baked corn casserolle in a 10 and a Carmal Apple Cheesecake in a 12  cooked the turkey in Metal trash can.    works great.  I will post the recipes when I get a chance.  playing catchup from being out all last week.

I cooked cornbread in one, the bird and dressing in another and pie crust in another. That left the inside oven for the important things....pies and yeast rolls! How do you cook a turkey in a trash can? Hope it wasn't a used one!

This was an old Boy Scout trick.  You start with about a 4 foot square of aluminum foil on the ground, then drive broomhandle into the ground in the middle of the foil

 till you have about 2  foot sticking up.  You impale the turkey on the broomhandle .  Make sure you have the bottom of the turkey about 6 inches off the ground.  Cover the bird with a 30 gal  metal trash can.  Put 20 pounds of lit charcoal on the top of the can and 10 pounds around the base of the can.  No coals go in the inside.  For a normal size bird (12-15lbs) it only takes 1 1/2 hours for it to get done.  I promise 11/2 hours.  this makes the trashcan into a convection oven of sorts.  I think I have pictures somewhere of this and will try to post them here.  If you are in the YahooDutch oven Group,the pictures are posted in my photo album(the Redneck Gourmet).

Yeah, I did.  I cooked the Apple Pie Ham recipe that someone posted on the Yahoo group.  It was a really pretty DO of food.  Tasted great hot, not so good cool.  I will do it again, but use less apple pie filling and less ham.  I cooked and layered a shank half spiral cut in a twelve inch oven.  The recipe called for layering the pie filling mixture and ham.  I added dried cranberries and golden grapes.  It made it really colorful. 

 

I still have intentions of doing a turkey sometime.  I read ( maybe on one of the new websites mentioned here?) about cutting the back out of the turkey (he used a chicken) so it will be flatter.  I almost tried this but hubby talked me out of it.  He would have had to do the lifting and cutting because of my arm.  I seasoned my new 16 and thought about using this for the turkey.  Maybe next year.
